Aprovecho Research Center is a research organization based in Cottage Grove, Oregon. It conducts research, design, development and testing of appropriate technology to address problems in developing countries, with a current focus on improved cook stoves and rocket stoves. The work aims to validate technology for practical use in real-world settings. 

Historically, the center partnered with Shengzhou Stove Manufacturer in 2008 to manufacture Aprovecho-designed rocket stoves in China, an initiative recognized with the International Ashden Award in 2009. More recently, in 2023, Proyecto Mirador Foundation partnered with Aprovecho to establish an on-site stove testing laboratory at its headquarters in Honduras, equipped with LEMS technology to test and improve its stove model. In late 2021, Aprovecho named Nordica MacCarty as Executive Director.
