Founded by partners John Ross and Phillip Walters, B.Hospitality Co. establishes classic restaurants that withstand the test of time. B. Hospitality Co. was founded with the launch of The Bristol in September 2008. It's sister restaurant, Balena, opened in March 2012 with partners Boka Restaurant Group (BRG). B. Hospitality Co. opened Formento's, an Italian-heritage restaurant in January 2015, followed by Nonna's, and Italian sandwich shop. Together with BRG, they opened Swift & Sons, an American steakhouse in Chicago's growing Fulton Market District. In November 2015, Cold Storage, adjacent to Swift & Sons, opened.
