En el año 1969 se fundó Caribbean Junior College, institución predecesora de Caribbean University, en la cuidad de Bayamón, Puerto Rico. Esta se caracteriza como una institución de educación privada, sin fines de lucro, co-educacional y no sectaria. En la actualidad la Universidad consta de la Administración Central, el Recinto de Bayamón y tres centros en Carolina, Vega Baja y Ponce. Debido a la ubicación geográfica tan conveniente de cada unidad académica, Caribbean University sirve adecuadamente a una gran parte de la población de Puerto Rico.

Fue autorizada por el Consejo de Educación Superior de Puerto Rico a ofrecer grados asociados en 1974 y grados de bachilleratos en 1978. En en el 1977, recibió su primera acreditación de Middle States Association of Colleges and Schools, al tiempo que comenzaba operaciones su segundo Centro en Vega Baja. Al año siguiente, el Consejo de Educación Superior autorizó a la Institución ofrecer programas académicos a nivel de bachillerato, por cuanto Caribbean Junior College pasó a llamarse Caribbean University College. A partir de la fundación de un tercer Centro en Carolina en el 1979, el ritmo de crecimiento de la matrícula y ofrecimientos académicos se aceleró aún más. Esto dio paso para que en el 1986 se funde el cuarto Centro en la cuidad de Ponce. Los grandes logros de la década del 80 culminaron con el cambio de nombre a Caribbean University en enero del 1990.

Desde su filosofía institucional y en el marco de la realidad puertorriqueña e internacional, Caribbean University tiene como visión fomentar el cambio social y económico que propende incrementar la madurez intelectual y personal de la sociedad ofreciendo un servicio de educación superior de excelencia. Caribbean University está comprometida con el principio de accesibilidad con los más desaventajados, comprensibilidad en sus ofrecimientos y adaptabilidad para satisfacer las necesidades de la comunidad que sirve.
