Artisan bakers specializing in one single loaf of bread - a hearty, yet light country French loaf, created in the tradtion of the 18th century. At Hearth Wood Fired Bread, our passion is to create a spectacular loaf of bread for you! We are committed to serving our customers and providing the best tasting loaf of bread possible. Why only one bread? Because making bread demands and deserves 100% of our attention in order to make it the best that it can be for you and your customers. Since we make only one loaf, we can focus upon it exclusively to ensure that it is always the finest quality. We take pride in the purity of our ingredients, stone milling organic grains just moments before slowly mixing our small batches. This ensures that there is minimal oxidation and that the grains retain their nutrition and flavor. One of the major components of a great tasting bread is the use of high-quality ingredients. We use heritage grains in our bread - ancient varieties such as emmer, spelt and Kamut. Typically "heritage" signifies a grain that existed prior to the mid-20th century and is openly pollinated, not treated or genetically engineered. These grains are nutrient dense and provide rich, distinctive flavors. Our artisan bakers create each loaf using a natural levain (live sourdough starter, not commercial yeast), shape by hand and bake each loaf in a 60-ton, 18th century wood-fired brick oven.
