La Perla Spice Co., Inc. specializes in the production of two Mayan seasoning pastes that can be used for cooking several kinds of meat, fish, or pork. These two products are called Achiote and Bistek and can be found in brick or paste form. Both of our Achiote and Bistek products are referred to as seasoning pastes since they act more as a “flavoring” rather than adding a “hot” or “spicy” taste. Achiote is our most popular seasoning paste and is red in color. It gets its beautiful hue from its main ingredient, the Annatto Seed. It can be used to flavor pork dishes, carne asada, and even rice. Its uniqueness is that in addition to adding such fantastic flavor to food, it adds a beautiful color presentation to any dish. Bistek is our other seasoning paste flavor. It is green in color and is made from the combination of allspice, black pepper, garlic, oregano and other spices. It is mainly used to flavor beef, but also adds an amazing flavor to fish. Unlike Achiote, Bistek does not add color to your meals, just great taste! We also offer an authentic recipe book that includes recipes for both the Achiote and Bistek seasonings as well as a variety of other spices.
