Based in Austin, Texas, Mammoth Creameries produces ice cream using natural ingredients such as grass-fed butter and high-quality heavy cream. The desserts are tailored for people following low-sugar, low-carbohydrate, high-fat diets, including diabetics seeking alternatives that fit their nutritional goals. The company grew from the personal health journey of its founders, Tim and Sue, who shifted away from carb-heavy eating after Tim’s diabetes diagnosis and developed a keto-friendly treat to suit their lifestyle.

In the food and beverage services sector, Mammoth Creameries positions itself as a niche ice cream maker focused on ketogenic and diabetic-conscious offerings. It expanded its frozen custard line with new flavors in 2021, following an earlier keto-friendly frozen custard launch in 2020. The operation runs with a very small team and emphasizes natural ingredients as it broadens access to dessert that supports specific dietary needs.
