“I was inspired by the possibilities of using a wide variety of local ingredients to create unique ciders, cysers and meads,” Curt Sherrer, Founder & Owner Our cidery operates out of the renovated Monkton Mill, an 1840’s grist mill, which is an example of our approach to business and life: Recreate, Explore and Discover. By working closely with the farmers we ensure the highest levels of quality and freshness for our ingredients. Our ciders and meads specialize in what our region grows best helping to support local agriculture and sustainability along the way. RUSTIC CIDER Recreating early America’s libation of choice, our cider is crafted from pressed heirloom cider apples,oak barrel fermented, and aged. Each apple varietal is fermented to dryness and aged for 5-12 months before we hand select barrels to blend into our finished cider. The final cider is left to age in the bottle, melding the blended cider into its unique character. We craft new ciders seasonally blending raw honey, pressed fruits and spices into our creations. RUSTIC MEAD Almost as old as civilization itself, meads are in its simplest form a honey wine. Our meads are made from raw unheated honey to retain essential flavors and aromas. We craft our meads in in micro batches and oak barrel age them for 6-24 months to allow mellowing. Meads are a fermenter's paradise as they traditionally include other ingredients like spices, herbs, hops, and flowers. Honey varietals all have their own characteristics. Local varieties include Tulip Poplar, Blueberry, Black Locust and Wildflower. MillStone Cellars is a Rustic Cidery producing ciders, cysers and meads focused on the handmade, rustic, refined, traditional and tasty. We are dedicated to creating honest and innovative products to complement the everyday repast.
