We conceived of our distillery 10 years ago because we were frustrated that our cocktail menu couldn’t jibe with our locally minded food and beer menu at Top of the Hill Restaurant & Brewery in Chapel Hill.  

Unable to source appropriate spirits, we decided to create our own.   In doing so we created the only organic distillery in the South.  Our formula for our distillery was simple:
