SuperFreezing is distinctly different from frozen - in that superfreezing reduces and maintains the temperature at -76F....which puts the product into stasis. Time has essentially stood still for it and when revived, comes back to exactly the moment of freezing - approximately 4 to 6 hours old. 

For tuna, there is no fresher option, and 80% of all tuna consumed in Japan is SuperFrozen - implictly conveying the superior quality of this product over fresh tuna which can be up to 3 weeks post-mortem by the time it reaches the kitchen.
