Choolaah is a fast casual Indian BBQ restaurant that serves traditional Indian dishes, with rich flavor, that appeal to the contemporary palate. Choolaah means clay oven. It’s a fresh take on the timeless Indian experience, sanja chulha, where family and friends gather around a community oven to reconnect. Indian Barbeque, by the Choolaah definition, is farm-to-table: fresh meats, breads and vegetarian ingredients, as well as cooked at high heats (up to 700◦). 

The aesthetics of the restaurant, fresh ingredients and made-to-order format distinguishes Choolaah from other fast casual dining establishments.  Choolaah is people-centric, neighborhood-centric and offers a dramatic dining experience where food prep is theater. The founders saw an opportunity to develop a menu of traditional Indian dishes that would appeal to the American market, without compromising the authenticity of the cuisine. Choolaah is based on the concept that Indian food should be authentic and accessible.
