Cookie Co. operates as a mid-sized regional cookie retailer and bakery based in Redlands, California. It began in 2020 when Elise and Matt Thomas started baking cookies in a home kitchen with traditional ingredients and assembling hundreds of boxes weekly for driveway pickup, which helped build a local following. The flagship shop opened nearby and established a rotating menu of four flavors per week, with a Chocolate Chip cookie always included. The company describes its mission as being the local cookie shop at the heart of towns, supporting community initiatives and charitable giving as part of its growth.

Since then, the brand has expanded to multiple states, opening stores in Harrisburg, North Carolina and Twin Falls, Idaho in early 2024, and in Montgomery, Texas in 2023. It has broadened its catering program, including adding a cookie pie to the menu, and in late 2023 formed a partnership with Food Finders Food Bank to support local needs.
