His culinary career began after dropping out of school at 15-years-old and completing an apprenticeship under Herman Schneider at Melbourne’s Two Faces. Five years of slogging it in the hot kitchen 14 hours a day, six days a week, he travelled to London and persuaded Michel Roux of the three Michelin-starred Waterside Inn to take me on. He believed working under these great chefs were the most important steps he took in his career. Today, he has an amazing team that helps him run his company that can be found on the carriages of the Eastern Oriental Express, at sea, on Carnival Cruise Ships, bringing healthy and high quality restaurant food to patients at the Mater Private Hospital Brisbane, Luke’s Kitchen at Kimpton Margot Hotel Sydney, Luke’s Table at The Sydney Harbour Bridge, Luc-San at Potts Point behind the iconic Coca-Cola sign, Luke’s Bistro & Bar in the Sydney Domestic Qantas Terminal & recently opened Bistrot Bisou in Melbourne. Luke has his own line of gourmet products and the co-founder of The Inspired Series and Australia’s Appetite for Excellence, a hospitality awards program for young chefs, waiters and restaurateurs in Australia. For 13 years since 2005, Luke had a 50-50 stake in the Salt Asia brand in Japan, Singapore and Indonesia but sold his remaining shares in the business in 2018 to focus on our Australian restaurants and new ‘Luke’s’ ventures, including Luke’s Kitchen, Luke’s Bar & Grill, Luke's Table, Luke’s Burger Bar to name a few. Operated Glass Brasserie at The Hilton Hotel Sydney from 2004 until 2024 (20 years) which is no longer in our company.
