Like the retail industry, the restaurant industry moved into the 21st century with SKU numbers that automated point-of-sale (POS) systems with supply-chain management. Unfortunately, the bar industry is still stuck in the 19th century. In addition, research shows that bar managers order less alcohol from distributors after completing inventory because of shrinkage costs.
