We believe the same care inmaking fine wine or craft beet be placed in creating a unique and delicious specialty coffee.  Beginning with the selection of the finest green coffee beans from organic farms throughout the coffee belt, we choose only Fair Trade growers that treat the local workers ethically and honestly.  Next, we design roast profiles for each of our signature coffees.  Our Roast Master personally supervises each roasting and will not sign off a batch unless he is personally satisfied with the final product.  We instantly chill our beans as they come out of the roaster and then air the em roasted bean for 24 hours to release its CO2 before packaging.  We use no machines to handle the beans for processing.  All the packaging is done with loving hands and decorated with traditional elements.
