Fat Shack is a restaurant concept that centers on late‑night dining, offering oversized sandwiches and fried specialties. The company was founded in 2010 by Tom Armenti in New Jersey, starting with a partnership with a local bagel shop to operate after hours. In 2011, Armenti moved to Colorado to open Fat Shack Fort Collins, the first expansion beyond the original setup. A close collaborator, Kevin Gabauer, joined to reorganize the menu, refresh the brand, and simplify operations, which enabled further expansion, including a Denver campus location in 2015 and the move into franchising. The brand has since grown to a national footprint with multiple locations, and a 2025 expansion added a new Fat Shack in Sioux Falls, South Dakota.
