The Fish Market means “Uncompromised Quality.” The Fish Market and all its entities promote, and demonstrate Uncompromised Quality on a daily basis. Our first restaurant opened in Palo Alto in 1976. The next was built three years later in Santa Clara. Del Mar (in Southern California) followed and opened in 1981. Our fourth restaurant opened in San Mateo in 1982 and included our first “Top of the Market” - a separate restaurant of only eighty seats, exhibition style cooking, its own counter, reservations, tablecloths - a little more pasta, a little more garlic, and for the first time, serving other entrees besides seafood. In 1989 our second Southern California restaurant opened its doors on the bay in San Diego. This restaurant boasts of another “Top of the Market” and our first Sushi Bar located in the downstairs Bar/Cocktail area of the restaurant. Summer of 1997 saw the opening of The Fish Market located in San Jose. This restaurant has all of The Fish Market amenities and also features a Sushi Bar in the Bar/Cocktail area of the restaurant. All of our restaurants feature an Oyster Bar. Every Fish Market has a Retail Market case in the front where guests can buy fish to bring home and cook, and where any menu item may be ordered for take-out. Farallon Fisheries is our fish distribution company. Farallon is located in South San Francisco. On a daily basis Farallon buys and delivers much of the seafood used in our restaurants. In addition, our Signature Smoked Fish is produced on site then delivered to the restaurants. We cure and smoke salmon, albacore, trout, and occasionally other species such as swordfish using the mild European method with hickory and sugar maple woods which produces unique, lightly smoked and moist seafood. Our main office is located in San Diego, next door to The Fish Market & Top of the Market restaurants.
