They pride themselves on providing the best quality milk possible for their cheese, often the milk is just minutes old when it begins it's transformation into succulent cheeses.  Heber Valley produces several cheeses including cheddar, jack, queso fresco and a fresh toasted cheese called Juustoleipa.
