Talk of the Town Restaurant Group is a mid-sized, family-owned restaurant group based in Orlando, Central Florida, founded in 1974 by Charley and Ron Woodsby, with Clark Woodsby serving as Executive Vice President. The Woodsby family now owns and operates six restaurants in the region, including Charley's Steak House, FishBones, Texas Cattle Company, and Vito's Chop House. The group centers on a steakhouse model that emphasizes high-quality beef, aging on-site for four to six weeks, daily hand-cutting and 30 hours of seasoning, followed by flame-grilling over a 1200-degree open pit fueled with Florida citrus and oak. In addition to its dining operations, Talk of the Town supports local charities through the Talk of the Town Restaurant Group Foundation, established in 2017 and powered by a Round Up for Charity program that has raised over $3.5 million. In 2023 the group announced a partnership with Chunk Foods to introduce plant-based steak at six restaurants, illustrating a willingness to diversify offerings while maintaining its core focus on beef-centric dining.
